Using the "Format" menu. The format menu will only be active when
the caret (i.e. keyboard focus) is in the message body pane.
(You cannot pick font styles and colours in the header.)
If the compose email window does not have a "Format" menu,
then
1. Close the compose window.
2. In the mail+news window, select your mail account / server
(e.g. "enid on pop3.test.com"), and go to
Edit -> Mail/News Account Settings...
3. In the "Account Settings" window, check the box
[x] Compose messages in HTML format
and then click "OK". (Please do this only for mail accounts,
not for news.)
4. Now open up a new compose email window. You should now have
a "Format" menu.
