You can't do Apache on Win 2k. For a simple email server, Windows 2000 comes with an SMTP server (and FTP and web servers). I don't know about a POP3/IMAP server, I've never needed or wanted to run an incoming mail server because I'd have to have the machine on 24/7 and I'd rather someone else deal with that. For Windows SMTP server though, Install IIS and the SMTP server from add/remove, window components. You'll have to install a few other things, but if you aren't going to use it immediately disable the web server.
