Having worked in the local restaurant scene, I know that just because a restaurant gets supplies from Sysco or other large suppliers doesn't mean the food comes from that supplier. A restaurant I worked for regularly got stuff off Sysco trucks--napkins, aprons, take-out containers, and so on--but the food came from other suppliers and was prepared from scratch in the kitchen.

There are places that do cater to vegetarians, but if you want more places, you need to convince more of the rest of us to eat only vegetarian.
