You need to be a little more specific. If you are trying to monitor something like the number of users currently logged in to a web site, and it is available from a log file, then you can write a script to get that information and put it into a log file for MRTG to graph.
If you are talking about the amount of clothing washed in LBS in a laundromat, it may be a little harder. If you are trying to monitor the number of gallons used in a household, on a weekly basis, you *might* be able to do it. For oddball ideas, check out http://www.icepick.com. The guy is awesome.
