You should use 64 bit counters at those speeds. The 64 bit counters are being used as these are gig-e interfaces. I've checked the graphs again and all is now OK; the historical data from the period when we were testing is now showing correctly on the weekly graph. No changes have been made to the configuration. The only think I can think that was different to the norm was that the interfaces were passing a constant volume of data, rather than the usual varying traffic. I will have a look at using one of the alternative as you, Steve Shipway and Mohammed Ali have suggested. Although everything is now OK I don't want a repeat of this.
