I would download a bunch of pre-made kiosk distros and figure out which
one is best, then customize it from there.  One of the problems is
security. Someone with the right skills will be able to damage your kiosk
and delete files on it if they are able to break in to the system and
access things they shouldn't be accessing.  Public Libraries have
computers that are sometimes configured only to be web browsers and
nothing else. I was able to find a flaw in my public library once as a
kid.  They had internet explorer running and you couldn't run any other
applications. However I found a way to run other applications. I didn't do
anything malicious, I was just curious to see if there was a way to break
in to the system.
