You should initiate activation during deployment. There is a simple vbs script that is part of the Office installation that does this. I thought there was something in OCT also if you are using a KMS that will automatically during it for you.

This works fine as long as the user is already an admin of the machine. However if the user is not an admin then this becomes an issue and you will have to put in your credentials as an admin. I have opened a case with MS to get this resolved and let you fellow ITForum OSDers know of a fix when I know.
