With the 1607 build of Windows 10, you can install the Pro version (using your Pro key) and then use the Enterprise key to change/re-activate for Enterprise. I just ran a test of installing / activating W10 1607 Enterprise and then changing the product key to Pro and it re-activated as Pro.
So it seems like you should be able to upgrade the W7 Enterprise systems to W10 Enterprise and then re-key for W10 Pro.
