We may just make it an option ("Inform me about conflicts") or so.

It is hard to do anything really wrong here. I'd suggest that you don't
use the mobile to transfer data between the two computers, though, as
the mobile usually have less database fields than Evolution.

The "UTF-8 bug" seems to be a problem with some entries from certain
mobiles that are not properly encoded, so libxml spits it out. Try
deleting your calendar entry with summary something like "Zv künd¼RS"
and try again.
I'll try to make a workaround for faulty entries.
