Wish version of the multisync packages have you installed? 

If you look at the botom of 
http://packages.debian.org/unstable/gnome/multisync.html
You find the syncml and bluetooth plugins.

If you want all plugins I recommend you to install
libmultisync-plugin-all.
http://packages.debian.org/unstable/libs/libmultisync-plugin-all.html

I don't understand the problem. Have you installed the packages for more
plugins than multisync finds or?
