Edit the libccid Info.plist file (may be in /usr/lib/pcsc/drivers/ifd-ccid.bundle/Contents/Info.plist) and change ifdLogLevel to from 0x0003 to 0x0007 Then use "pcscd --foreground --debug --apdu" to generate pcscd logs.
