You mean, the documentation doesn't exist. That's because things
are supposed to happen automagically: The $charset configuration
variable tells mutt about the local system's character set, while
the charset parameter tells mutt about the character set in a given
message.
The rest should just happen automagically, provided your system has
installed the character set translation tables.
In the unstable branch, there is another variable named send_charset
which contains the name of the character set used on outbound
messages.
