OK, to partially answer my own question... If I sort the view by Importance, I can then: A) Right-click over the Importance column to get the task to the nearest 25 units of Importance, then B) Use Alt+C (to give Contexts field focus), then hit Tab once (to give the Importance slider focus). I can then use up/down arrow keys to increment/decrement the value of Importance by 1 unit.
It's a bit fiddly but it allows me to fine-tune sort order within "Importance" to the nearest 25 as set up by using the dropdown.
