From a user perspective, LVM's are a tad tricky to safely and properly implement and don't allow for very good backup(or at least I've been told). I don't know how difficult it would be to include multiple directories to the backend, I think it should at least be given some more consideration.

LVM does not work across multiple server machines.  I could
certainly posit wanting to use the 200G drives from 5 different
servers and NFS mounting them.  You can't combine them with
LVM.
I wonder if you could use iSCSI to share the drives from multiple servers and combine them with LVM
