Yes, this is possible, and is covered in one of the RAID FAQs
somewhere...

Basically, you use the 2 new drives to create a 3-disk raid5 set that's
missing a drive.  Make your filesystem on it and copy your data over.

Then take your original drive and add it into the raid set to get your
redundancy protection.

Works great.
