I was planning on calling up Dish TV and attempting to find someone
knowledgeable enough to give me the skinny on serial ports on their
boxes. I'll let you guys know if I find anything.
I will save you the effort. Dishnetwork does not currently offer any receivers with a serial port or any other means of external control other than the IR or RF remote. They have a couple of older models (no longer offered) that have the ability to control another box via the X10 protocol but they use a smaller plug along the lines of a RJ-23 (telephone headset plug) not a 9 pin din.
Directv used to offer receivers with a serial port however even they no longer offer it. Both companies are going to push to have you use their own PVR.

That's not true in the case of DirecTV. I just bought a Samsung TS360
HD receiver this last December and it has a serial port that can be used
to control it.
