That's most likely because using DVI bypasses the scan-converter/scaler tvout portion of the chip. With DVI (analog or digital), it's basically the same as VGA... so it uses the modeline as-is... without screwing with it like tvout. This is a common problem, the nvidia drivers don't seem to allow for overscan correction when outputting via DVI.
What you can do for Myth is setup a custom front end size. In Setup > Appearance there is a screen with GUI size and offset settings. It can take some messing around, but basically play with X and Y offset until you get the top left corenr right, then play with GUI size to get the bottom right corner.
That should fudge the GUI, alright, but...
Doing this probably makes your nice 1920x1080 resolution into a bastardized 18XXx10XX size for video playback. Thus it's distorting the picture by forcing a rescale. Then turn on Use GUI size for TV playback to have it use the same settings. You may also have to mess with overscan and scan displacement in SetupTV Settings > Playback to get things perfect.
All of this is educated speculation on my part since I've never messed with DVI.
