rpm -e packagename
but you may run into dependency issues and whatnot...I am hesitant to even mention this since the damage that can be done if you start getting into forcing rpm removals can be major.
do you absolutely have to remove them? taking them out of the menus is probably safer

I edited the .xml files so that the phone portion is removed from the menu screen, but I'd rather remove them altogether.
