Thanks to everyone who replied with suggestions (and anyone else who read my request), I have arrived at a solution. I found a copy of Wordstar v4, and it has an ANSI/VT-100 terminal in it. The installation was easier than version 3, and the configured Wordstar v4 works with Hyperterminal set to VT-100. I assume two more configurations and two more WS files, and it will be working with my Heath H19, and my buss-based terminal (Soroc IQ-120).
On a related note, along with Worstar version 4, I also found the missing patch documentation for Wordstar version 3 and 3.3. This would have been plan B, but since version 4 works with Hyperterminal, I guess I just upgraded from Wordstar version 3 to version 4!
