Barndt Ham Stir Fry
1 to 2 cups match stick ham, leftovers
1 medium onion quartered
1 cup tiny carrots, cut lengthwise in half
1 chunk green pepper
2 to 4 tablespoons soy sauce lite
4 tablespoons peanut butter
1/4 to 1/3 cup pineapple juice
1/2 to 1 cup chunk pineapple
1 to 2 tablespoons peanut oil

Put the peanut oil in the frying pan and let it get hot. Then put in 
the carrots and cook about 5 minutes, then add the onion pieces, 
green pepper pieces and let cook until just crisp. Then push the 
vegetables to one side and make sure they don't burn and add the ham 
and brown slightly and pass to the side. In a small bowl mix the 
pineapple juice, peanut butter and soy sauce well and add the sauce 
to the meat and vegetable mixture and you might have to mix corn 
starch and a little water to add to the sauce. At the same time add 
the pineapple pieces so they get warm. Serves 2 to 4.
