Boots in VA is looking for an oven cooked haddock recipe. I have a 
favorite I would like to share. 

Oven baked fish 
On a plate, combine 1 cup dry white bread crumbs with 1/4 cup grated 
parmesan cheese, salt and pepper. Stir the mixture with your fingers 
until just combined.

Cut skinless haddock fillets or any other white fish into 5 inch 
pieces and brush with canola oil. Dip the fish into the crumbed 
mixture, coating it all over.

Arrange the fish on a foil covered, Pam sprayed cookie sheet and 
bake for 15 minutes or until golden colored and firm to the touch.

I like this with home made tartar sauce . Mix mayonnaise, chopped 
onion, pickle relish and a touch of horseradish.

Mexican-Style Haddock
1 pkg. frozen haddock fillets
1/2 t. salt
1/4 t. pepper
1 small onion, thinly sliced
1 tomato, peeled & cut into 1/2" slices
1 T lime juice
1 T vegetable oil
1 T snipped parsley
1 8 pitted ripe olives, sliced

Heat oven to 375. Arrange fillets in ungreased square baking dish, 8 
x 8 x 2 in; sprinkle w/salt & pepper. Layer onion & tomato on 
fillets; sprinkle w/lime juice, oil & parsley. Top w/olives. Cover & 
bake 30 min. Uncover & bake until fillets flake easily w/ fork, 
about 15 min.
4 servings.

Mexican Corn Bread
1 cup cornmeal
1/3 cup flour
2 tbsp sugar
1 tsp salt
2 tsp baking powder
1/2 tsp baking soda
2 eggs, beaten
1 cup buttermilk
1/2 cup canola oil
1 cup cream style corn
1/3 cup chopped onion
2 tbsp chopped green pepper
1/2 cup grated cheddar cheese

Sift and mix together thoroughly dry ingredients in bowl. Combine 
remaining ingredients, then stir into dry ingredients only until 
moistened. Pour into greased 9 inch square pan and bake at 350ยบ for 
30 minutes.
