Cran-Apple Pork and Sweet Potatoes
1 cup applesauce
1 or 2 TBSP brown sugar or honey
3 large sweet potatoes, peeled and sliced (about 4 or 5 cups sliced)
2 to 2 1/2 lbs pork chops or cutlets
1 can whole cranberry sauce
salt and pepper to taste. Pour the applesauce in a 3 1/2 quart or larger slow cooker. Add the sweet potato slices, sprinkle or drizzle with brown sugar or honey, salt and pepper lightly. Add pork. Lightly sprinkle pork with salt and pepper. Spoon cranberry sauce over all. Cover and cook on low 7 to 9 hours.

Shrimp and Egg Salad Wraps
4 hard cooked eggs, peeled and chopped
1 cup cooked shrimp, chopped
2 TBSP finely chopped green onions
3 TBSP mayonnaise
1 tsp mustard
1/4 tsp salt
4 8 inch flour tortillas
2 cups shredded lettuce
Mix all ingredients except tortillas and lettuce. Spread shrimp mixture evenly on each tortilla. Top with lettuce. Fold in sides of each wrap and roll up. Cut each in half. Serve immediately.

Carrot Cake recipe.
2 cups sugar
2 cups flour
2 teaspoons salt
1 teaspoon cinnamon
1 teaspoon soda
1/2 cup oil (vegetable, corn or canola--I have used them all)
3 eggs
2 cups grated carrots
1 small can crushed pineapple (the can size is approximately 8 ounces)

3-1/2 ounces of flaked coconut (the coconut usually comes in a 14 ounce bag and I use 1/4 of the bag if you have the 7 ounce back of coconut use 1/2 the bag. In our stores coconut comes in flaked and shredded. I use the flaked coconut)
1 cup chopped walnuts

Mix all of the ingredients together (I don't normally use a mixer for this. The batter is really moist) Pour batter into a 13" x 9" x 2" oblong pan or 2 round 9" pans and BAKE AT 350° (13" x 9" x 2" for 35 to 40 minutes and Round 9" pans 25 – 30 minutes

ICING
8 ounces cream cheese
1 pound powdered sugar (I think in recent e-mails this was measured at about 3 -3/4 cups)
1 teaspoon butter or margarine
1 teaspoon vanilla
1/4 cup chopped walnuts for decoration (optional)

Mix together completely. (I use a mixer for this portion. Add the sugar slowly or you will have powder all over the kitchen.) Frost the cooled cake. I normally top the cake with some additional chopped walnuts, but it isn't necessary.

ROCK CANDY
2 cups granulated domino sugar
1 cup water
3/4 cup white karo
food coloring to match the flavor
powdered confectioners sugar

Mix sugar, water & syrup, stir until sugar is dissolved. Boil to hard crack and remove from heat. Add flavored oil (drugstore is a good source). Pour on cookies covered with butter.
Let stand-crack into bite size pieces. Put powder sugar in a paper grocery sack and shake the cracked pieces until they are coated.
