Easy Truffles
1 bag (12 oz.) Nestle semi sweet chocolate chips
1 can Condensed sweetened milk
1 t vanilla (or any flavoring of your choice)

Put chips in microwave safe dish. Nuke on high for 30-45 seconds, or until melted. The chips may still look like they are not melted, but you need to stir until they are all melted. Do not over melt. Stir in sweetened condensed milk and flavoring. Stir until well blended. Place in fridge until firm, about 3 hours. Remove teaspoon amount and roll into ball. After rolling into ball, roll in powdered sugar, sprinkles, nuts, etc. Use your imagination. I place them in the miniature muffin cups. Place in plastic containers with firm fitting lids. Must be refrigerated.

Pineapple Casserole
2 (20 oz.) cans pineapple chunks
1 cup sugar
6 Tablespoons flour
2 cups grated cheese, your choice
60 (plus) Ritz crackers, crushed
2 sticks butter

Preheat oven to 350°. Spray a 13 x 9" baking dish with cooking spray or you can grease. Drain pineapple. Reserve 6 tablespoons juice. Mix sugar and flour and add juice. Stir in cheese and pineapple and place into the baking dish. Mix Ritz cracker crumbs and melted butter together and evenly sprinkle on top. Bake 25 to 30 minutes at 350°.

Cranberry Casserole
3 cups chopped, peeled red apples
1 1/2 cups sugar
2 cups raw cranberries

Topping:
1 stick melted butter
1/2 cup brown sugar
1 cup oatmeal
1/2 cup flour
1/2 cup chopped pecans (we use 1 cup)

Preheat oven to 350°. Spray a 13 x 9" baking dish with cooking spray or you can grease. Mix together apples, sugar and cranberries and then press down into the baking dish. Mix the rest of the ingredients together; spread over fruit and sprinkle with chopped pecans. Bake 1 hour at 350°.

CINNNAMON - GLAZED PECANS
1 lb. pecan halves
1 egg white
1 tbsp. water
1 c. sugar
1 1/2 tsp. salt
1 tsp. cinnamon

Beat egg whites stiff. Beat in water; add pecans and mix well. Mix dry ingredients well together. Sprinkle over nuts and stir well. Spread in one layer on foil-covered cookie sheet. Bake 30 minutes at 300 degrees. Cool before removing from foil. Store in an airtight container. Enjoy!
