Rancher's Party Dip
1 pound ground sausage-hot or mild
1 pound ground chuck
2 garlic cloves-minced
1/2 onion-finely chopped
1/2 bell pepper-finely chopped
1 cup milk
1 package taco seasoning
28 oz stewed tomatoes
1 jar of salsa-hot or mild
16 oz Velveeta-cubed
salt & pepper

Mix meat, garlic, bell pepper, onion, salt and pepper in skillet. Cook until done. Drain well. Add taco seasoning, salsa and tomatoes. Simmer 10 min. Melt cheese with milk in a saucepan. Dump all ingredients into a 5 qt crockpot and heat on low 2 hours or until hot.
Serve warm with tortilla chips.

Cheeseball
2 (8 oz.) packages cream cheese, softened
1 package Good Seasons Zesty Italian salad dressing mix (dry)
chopped pecans

Mix the dry Zesty Italian dressing mix into the cream cheese, mixing well.
Refrigerate until you can form it into a ball. Roll in chopped pecans. Serve with crackers. Enjoy!

NOTE: Once I get the salad dressing mix mixed into the cream cheese, I divide it in my dish and just push it apart so that it will make 2 (8 oz.) balls rather than 1 large ball. Do this before you refrigerate it. Either gives you one for each end of the table or save one until it is needed.

Easy, All-Day Meatloaf and Vegetables
Makes 6 servings
4 large, or 6 medium potatoes, sliced
6 carrots, sliced
1/4 tsp. salt
1 & 1/2 lbs. ground beef
2 eggs, beaten
3/4 cup cracker crumbs
1/3 cup ketchup
1/3 cup finely chopped onions
3/4 tsp. salt
1/4 tsp. dried marjoram
1/4 tsp. black pepper

Place potatoes and carrots in slow cooker. Sprinkle with 1/4 tsp. salt. Combine remaining ingredients. Mix well and shape into loaf. Place loaf on top of vegetables, making sure that it doesn't touch sides of slow cooker. Cover. Cook on Low 8-10 hours.
