Gingerbread Cookies
3-1/2 cups all-purpose flour
1-1/2 teaspoons ground ginger
1-1/2 teaspoons ground cinnamon
1/4 teaspoon salt
1/2 cup white sugar 1/2 cup shortening
1 egg
1 cup molasses
1 teaspoon baking soda
1-1/2 teaspoons warm water
1/4 cup raisins for decorating

In large bowl, cream shortening, sugar, egg and warmed molasses. Dissolve baking soda in warm water and add to egg mixture. Beat until smooth.

Slowly add flour, spices and salt. Mix until well blended. Cover and chill for 24 hours. Preheat oven to 350 degrees F. Grease cookie sheets. Roll out dough to a thickness of 1/4 inch on a floured surface. Cut out gingerbread men using cookie cutters and place 2 inches apart on cookie sheets.

Use raisins to make eyes, noses and buttons. Bake 10 to 12 minutes.
Let cool on wire racks.

FINISHING TOUCHES
Use icing to make "X"s for eyes, decorate accordingly

Egg Casserole
6 eggs
1-1/2c. milk
3/4 c. bisquick
1 can diced green chilies w/liquid
season to taste

Mix the above ingredients together. Melt 1/2 stick butter in 9 x 11 baking dish. Pour egg mixture into pan-sprinkle top with grated cheese (jack, cheddar, pepperjack-your choice; approx. 1-2 cups)..using the back of a spoon, push the cheese into the egg mixture. Bake at 350 degrees, 40-50 minutes (until golden brown on top). cut into squares and serve.

You can substitute chilies for pre-cooked sausage, bacon, ham; mix in pre-cooked chicken and broccoli for a nice brunch dish.

Poinsettia Cookies
1 cup (2 sticks) butter or margarine, softened
1 cup confectioners' sugar
1 egg, beaten
1-1/2 teaspoons almond extract
1 teaspoon pure vanilla extract
2-1/2 cups all-purpose flour
1 teaspoon salt
Red decorating sugar, for garnish

Cream butter in a large bowl with an electric mixer. Add confectioners' sugar; beat well. Beat in the egg and extracts. Blend in the flour and salt. Form the dough into two disks and wrap them in plastic. Chill the dough well.
Remove one disk from the refrigerator. Roll dough out on a lightly floured surface to 1/8-inch thickness. Cut into 1 1/2-inch squares, then cut from each corner of the square almost to the center. Turn over every other cut point to the center and press gently, forming a pinwheel (or poinsettia). Sprinkle the
center of each with red sugar. Repeat with the second disk of dough.
Preheat oven to 350 degrees F. Place the cookies on greased baking sheets and bake until very lightly golden, about 8 to 10 minutes.
Makes about 5 dozen cookies.
