The complexity of any project lies in its scope. Choose any project and define 
the scope according to the time and effort you think should be dedicated. There 
is nothing like easy and hard. A simple project like chat applications (which 
is the most loved one for all beginners) can also be blown upto a full scale 
messenger service. 
But if you are really looking for one-day projects, just to get a grasp of java 
I suggest thinking of some small tool that accepts data from the user and 
stores it in a database. It can teach you front-end and back-end concepts or a 
simple echo-server to learn networking concepts to begin with.
