I have a good news for you.
Prof Sanjay Shitole is cc to this email because he is HOD of the SNDT's
UMIT branch of B.Tech.
They have shifted entire labs and modified the courses exactly the way
you wish.
Infact Myself and Prof Shitole took this as a joint venture in 2009 and
it took us a complete year.
At the outset I would like to give you one tip. Try netbeans or Eclipse
as a good IdE for Java.
Also Postgresql is a great choice for SQL if you wish to include stored
procedures (which is not so matured in MySQL as of now).
I have personally been a consultent to 15 colleges in Maharashtra where
the organization took a decision to totally or almost shift every thing
to free software.
With that experience I am always handy in case you need me.

We have really started a mission to FOSSify complete B.Tech. CS labs
from first to fourth year. We want a full-fledged running GNU/Linux
system on each computer. We want to utilize a distro which may run
even on modest hardware with full support for software development
projects of B.Tech.
So I am really talking about replacing Oracle with MySQL and Visual
Studio with ***** (something still under search - C,Java,JDBC with
MySQL,JSP will be used mostly).
GLUG Meerut wanted this to happen and finally our chairman has given
us the green signal. I ask all the FOSSouls to help us do this. We are
going to ask many questions and solve many for the organizations
similar to us.
