This is easily fixed as you create your own dictionary, you can in fact create as many dictionaries as you want. Legal, medical etc., so these terms don't just go into the normal dictionary. But there are many words that I just place into the ordinary OO.o dictionary, and they seem to stick. I use the English spelling. I think though, that both words are retained. Which is fine, as they are often so in my Oxford dictionary. I used to love the M$ Word, but once I got to know OpenOffice better, now use it exclusively.
