What you suggest requires an external storage area large enough to hold the
contents of your two partitions. This external storage area can be an
external hard drive or an NFS or Samba server or the like, or at the very
least an SSH server. That would be best, otherwise, if you have a cd writer
or dvdwriter, you can backup onto them.
Back up everything onto the external device, then install the new drive and
then restore the data.
I would do a fresh installation on the new hd, and restore only the relevant
bits like home directories and data.
It would be much easier on a desktop, but that's life I suppose.
