Just an attempt to help (I am not that knowledgeable)... Hack your XF86Config[-4] file by 1. adding a monitor section with the specs of your projector. 2. in the screen section add a subsection display which refer to the new "monitor" and has the required resolution in the mode line. I would give it a different depth than the flat panel (not necessary but might help) 3. I would invoque startx with that depth specified when using the projector.
There is certainly a more elegfant way to do what you want but I don't know it.
