Just an attempt to help (I am not that
knowledgeable)...
Hack your XF86Config[-4] file by 
1. adding a monitor section with the specs of your
projector.
2. in the screen section add a subsection display
which refer to the new "monitor" and has the required
resolution in the mode line. I would give it a
different depth than the flat panel (not necessary but
might help)
3. I would invoque startx with that depth specified
when using the projector.

There is certainly a more elegfant way to do what you
want but I don't know it.
PS your problem is due to the fact that flat panels
(and notebooks) have ONE builtin resolution any other
resolution can only be achieved by using only part of
the screen or by interpolation (lousy picture quality)
