The address interpolation tool adds the street name to the nodes at each end of the interpolation. So, you need to select both the way which will become the addr:housenumber interpolation way (without any tags yet) and the street that those houses use as there address. With those two ways selected, (use Shift-Click to select more than one way) open the interpolation tool. It will have the street name pre-entered, and all you will have to do is enter the starting and ending addresses and the interpolation increment.
