Hi Simon, and welcome! You can render in mapnik without visible names, as shown here on the wikimedia toolserver. http://toolserver.org/~osm/locale/?zoom=2&lat=0&lon=0&layers=BFFFFFFFFFFFFFFFFFFFFFFFFFFFFFFFF You can then add the names using your locale or translation of choice. I didn't do the work shown here so I can't tell you exactly how "simple" it might be. The default osm style used in mapnik is rather involved and so I would call any modification of that style particularly "simple". But clearly what you want to do can be done.
