there are gear ratio spread sheets with formulas for determining chain length(or number of links) and also simple charts giving different ratios on the internet. I have the links saved on another computer that is unavailable at the moment but you can do a search for the stuff I'm sure. I think there is some of this on Paul's Nighthawk page under the maintentance section.
You should consider the weight of the rider(you)passenger(hopefully none)and the weight of your luggage that you intend to take along. You do not want to reduce the torque to the point that you stress the engine excessively and that is a factor of engine and the weight it has to move... this is a moving target of the gear ratio.
