I like the idea of taking it for an extended ride and seeing how it performs and the temperature of the pipes at the end of the ride. Eliminate the simplest possibilities first. Move from knowing nothing to at least knowing what it isn't. Speculated guessing doesn't actually establish anything. I suggest doing the sparkplugs first (easiest). Examine them carefully to see what they tell you about the conditions in the cylinders that they come out of- that could tell you a lot. Checking the compression would be easy with the plugs out and would probably tell you more about what it is/isn't. Checking the distance that the spark will jump will tell you a little more. Or get an (ex) friend/girlfriend/wife to hold the wire and give you an opinion! (And and she claimed you didn't have enough spark!). If the spark is good and the compression is good then move your suspicions on the carbs. Just keep illuminating things and before you know it the bike is fixed! I'd be willing to bet money it is the carbs. There are a couple of us who have bikes with 100K+ miles, and I have seen quite a few for sale with 75K+. So unless you have 50K or more on you're bike or if it is smoking the compression is probably fine. I would also do a compression test on each cylinder. It sounds like low compression on the two right side cylinders. They may be running, but not like they should. You can get a compression tester fairly cheap at Harbor Freight Tools. Low heat off of the headers is a classic symptom of low compression or, if your lucky, bad plugs.
