Have you tried testing for vacuum leak(s)?

Also, it has worsened/changed. Idle's now around 1500 all the time,
with a 2500+ idle speed when leaned. Super bizarre... tapping on
the carb bowls produced no consistent effect.

cable binding, or the enrichener plungers it's connected to, sticking,
causing choke to engage when leaned left.
I'd try some WD40 on the brass plungers on the carbs, see if that
changes anything.
