I have a set of the stainless steel bars mentioned. They are good quality reproductions of the originals and are made in Vietnam. No longer have the link to the source, but if they're still around you should be able to pull them up with a search of Ebay Motors. They cost about $120 if I remember correctly.
Don't expect much from them, crash-wise. They are small and were intended mostly as mounts for highway pegs and offer just token protection for the motor. Ditto the chrome originals. Almost all parts for the 91-03 Nighthawk 750s are interchangeable, by the way. Only changes year-to-year were paint colors.
