Just try them all (not only libui) and see what you like best. Create a simple _hello word_ button. You will also learn that most GUI libraries are not that different from each other. May be only some features.
The same counts for different programming languages as well. New paradigms are more difficult to learn, but once you know them it is easy to adapt.
