I usually buy keystone jacks from cablestogo.com, but you can usually 
pick some up at home depot or an electrical supply store.

I'd just buy the cheaper jacks regardless of whether they're cat5 or 
cat6. You can run gigabit ethernet on either. There is no huge advantage 
to running cat6 (rated beyond gigabit) right now and besides the jacks 
are easy to replace.
