You could. Under VMWare server, you are limited to guests only getting 2 CPUs. This would limit how much you could consolidate under vserver before hitting a CPU bottleneck. Also when vmotion decides to move your server, you are moving a lot of running machines at a time and loose some granularity. Right now I have 5 guests. 1 is our zimbra server, and 3 are mostly idle right now. Processes on the host only are 87. Total over host and 5 guests are at 214. Previously, these 5 guests had been allocated at least 11 gig of memory. As vservers, the host has 8 gigs ram, and is currently swapped by 984k, has 5 gig of cache, and 50 megs free.
