Turns out with OS X Leopard it's a simple matter of doing a Cmd-K
(connect to server) and entering:

nfs://name_of_server_or_IP_address/share_name

I also saw the post on "become root, do the voodoo" - and none of that
is necessary.  We haven't done any tests to compare NFS with Samba,
generally I understand that NFS can be much faster.  In this
particular application the files being shared in the computer lab are
quite large, and high speed is important.
