I *never* give an prospective employer a number.  Or I say with a big
smile on my face, "well, I'm looking for $3 million a year plus a
golden parachute - now, what is your counter-offer?"

The point is, I've thrown numbers out that were *way* too low and
really screwed myself. I've also, as a hiring manager, had really
qualified folks throw numbers out there which was so high I
disqualified them. Then I found out, after passing on a great
candidate, that they were only expecting that to be a starting point
for negotiation.

Always let them throw the first number out. At the very least, lead
with "well, tell me what the salary range for this position is, and we
can go from there."
