Install Windoz first. If Linux is fist, Widoz will break the dual boot.

Both, I believe, are based on Debian testing, so should be about the same.

Eventually I want to run a Linux server, so I was kind of favoring Ubuntu

If stable you want, it is Debian Stable. I also run Debian Stable on the desktop. Although nothing is perfect, it locked up in 2008, but a new memory stick fix that.
