   No, Superset does not show tooltip text just because a field is named 
"tooltip_text". The tooltip content in deck.gl polygon charts is determined by 
the fields you select in the chart configuration—typically the "name" field, 
the metric, and the line column. Any field you include in your dataset and 
select in the chart setup can appear in the tooltip; the field name itself does 
not matter or have any special meaning. If you want to display a 
custom-formatted value, you can create a new field (with any name) in your 
dataset and select it in the chart configuration, and Superset will show its 
value in the tooltip just like any other field.
