Two observations from a local reproduction, in case they help whoever picks
this up:

   - A container on the compose network can open a TCP connection to
`host.docker.internal:9000`, so the Lakekeeper side of a `host.docker.internal`
endpoint would work on Docker Desktop.
   - macOS itself does not resolve that name, so a host-native JVM receiving it
from the REST catalog fails — which is why an earlier attempt at that endpoint
did not work end to end. Adding `127.0.0.1 host.docker.internal` to
`/etc/hosts` is what closes that half.

Neither half has been validated through the full vended-endpoint path, so
this is evidence rather than a proposed fix.

Also worth noting: the same staleness hits the default `texera` warehouse,
so it is not specific to the per-user feature — an IP change breaks Iceberg
storage on local-dev regardless of `storage.warehouse.enabled`.
