Users is a specific local group with specific members. On a machine in a domain this group usually contains the global group Domain Users.
Authenticated Users is closer to Everyone, with the important distinction that Authenticated Users have been authenticated locally, by the machine's domain, or by a trusted domain of the machine's domain.
