I feel like an idiot now - this is how I have them licensed now! I don't
know why I thought the Exchange Server would be any different as far as
server licenses...

  Depends on the load, but, yes, splitting services over multiple computers 
is generally considered a Good Thing.

  But, typically, this is not such a big deal, as most people license as
"per-seat".  Give each workstation a Windows Server CAL.  License all your
servers as "per-seat" (and NOT "per-connection").  Then it does not matter
if you have one server or twenty; the workstations each have a CAL.
