\usetypescript[times][ec] \setupbodyfont[times]

will give you tx etc, same for palatino

embedding is controlled by the pdftex map files; i strongly suggest to 
always embed the fonts, since metrics may vary (search for mails from 
george white and nelson beebe on th epdftex list for explanations).

\definefont[thisfont][utmr8a at 137pt]

even better:

\usetypescript [serif] [times] [ec]

\definefont[thisfont][Times-Roman] \thisfont ...

that way you also get the encoding related thinsg right

(optionally you can define the interlinespacing)
