Any version of *nix is seriously a better choice than Win32. If you think of all the extra baggage that comes with a full GUI (on top of a server), who needs it...
It's not that hard - any of the Linux magazines routinely publish HowTos on compiling from source (UK's Linux Forum did one in the last 3 months - check the web site). Buy a book - all of the basic Linux books also have tutorials.
