the 2.1 branch is very stable on Linux, IMHO, and I have it getting
absolutely hammered with sFlow traffic from my Foundry FastIron routing
cores.

Windows environments tend to be less stable than UNIX/Linux
environments pretty much across the board.

For network monitoring and such, I would highly recommend you use a
UNIX box for that -  Windows's networking code isn't really as good,
and you may have trouble with large volumes of traffic.  NTOP is also
very memory-intensive and UNIX tends to do a better job of managing
such resources.
