We went from Windows 2003 functional level directly to Windows 2008 R2 on both 
forest and domain 2 ½ years ago.  We did it almost immediately after getting 
rid of the Windows 2003 DCs and at the time we were on Exhange 2007.  We also 
have 1 forest and 1 domain, but with 1 site.

I'm not saying that rushing into it was the best way to go about it, but we 
didn't have any issues at all.  We have over 50,000 user objects, maybe 20,000 
computer objects and over 750 GPOs.

I'd like to enable the AD recycle bin functionality in our domain and in order 
to do that will need to raise the functional level from 2008 to 2008R2.  So far 
I haven't run into anything to worry about with that but wanted to ask if there 
were any gotchas anyone had run into during the process.  I've done a few of 
these in the past with no issues but we've since added Exchange to the mix so 
that's my main concern.  Single forest, single domain, multiple sites.
